This recipe for lemon thyme sandwich chicken is quick, easy and delicious. I say ‘recipe’ but it’s so simple it barely classes as a recipe. Sometimes the simple things are the best though! Ingredients
- 1 chicken breast or approx 150-200g of leftover roast chicken
- Juice of 1/2 lemon
- 1-2 tablespoons mayonnaise
- 1/2 tablespoon of fresh thyme
- Pinch of salt
- Pinch of black pepper
Lemon and thyme sandwich chicken recipe
Serves 2 (enough to fill 2 rolls or sandwiches).
Shred the chicken into small pieces using a fork then mix in the mayonnaise — I added 1 tablespoon but add more if you want a creamier sandwich filling.
Once the chicken and mayonnaise are mixed together well, add the juice from half a lemon, a tablespoon of fresh thyme and the salt and pepper. And you’re done!
Sensible bit: eat your sandwich chicken on the day you make it if you are using left over chicken.
